Ingredients (10 quarter chicken thighs, 2 tbsp. sea salt, 1 tbsp. black pepper, ½ cup fresh basil or 4 tbsp. dry basil, ½ cup fresh thyme or 3 tbsp. of dry thyme , 1 lemon and zest, 4 tbsp. honey, ½ cup olive oil)
Recipe: Preheat your oven at 375 degrees. Mix together the olive oil, basil, thyme, salt, and pepper for rub mixture in a mixing bowl. Squeeze lemon juice over both sides of chicken. Sprinkle honey and spice rub mixture all over the chicken (use basting brush) and season the chicken once more with a couple dashes of salt and pepper and lemon zest. Transfer the chicken to the oven and roast until a about 1 hour and 30 minutes.
